A story on canning that ran a couple of weeks ago prompted a few e-mails, most thanking Bev Fazio for her good advice on how to can summer’s produce. But one missive caught my eye. It was from Ginger Marine, a North Georgia reader who wrote, “You may not be aware of it, but in Georgia there are still some community canneries. I have put up about 200 quarts of food this summer in our local one. I know of three others in surrounding counties, although many have been discontinued over the years. People even come from Tennessee and North Carolina to do their canning.
I tried to find more information on the Internet with little luck but Ms. Marine sent an additional e-mail with a little more information:
“The cannery is located on Bobcat Trail in Ellijay, Ga., next to the high school and bus garage for the school system. It is open on Tuesdays and Thursdays July-September and charges a minimal fee for processing.”
If you can’t make it, I did find an interesting Web site that teaches free canning classes via video. Go to www.uga.edu/nchfp, scroll to the bottom of the page and you’ll find a link to sign up for a free class on Preserving Food at Home: A Free Study. Great information for all of you wanting to learn a little more.
Remember that if you are canning food for sale, the law specifies the food must be processed in a certified kitchen.
