Times Free Press Publisher and Editor Tom Griscom stopped by my desk last week with an interesting list of equivalent measures. I always refer to my Joy of Cooking to find how many tablespoons are in a cup and things like that. This was nothing of the sort. It was a list of measurements the way they did it in our great-grandparents’ day. Still, good cooks today use some semblance of the method. Experience is all it takes ... knowing exactly how much of something a dish needs without having to pull out the measuring cup or spoons.
Here’s an example of a few of the more common terms still used today.
* Handfull of flour ... 1/2 cup.
* Dash of pepper .... Three good shakes or 1/8 teaspoon.
* Handfull of salt or sugar ... 1/4 cup.
* Pinch of salt ... 1/8 teaspoon.
* Lump of butter ... 1 well-rounded tablespoon.
* 1 teacup ... 3/4 cup.
