Pita Pizza

Pita Pizza

Yield: 4 pizzas, Serves 2-3


2 round whole-wheat pita pockets

4 T Athenos hummus (or other brand with similar nutritional values)

1/2 to 1 cup zucchini cut into matchstick-size pieces

1/2 to 1 cup yellow squash cut into matchstick-size pieces

1/2 red pepper, seeded and chopped

1/2 to 1 cup mushrooms, diced

1/4 cup red onion, diced (optional)

1 cup mozzarella or reduced fat shredded cheddar cheese

salt and pepper to taste

(You can swap out any vegetables of your choice or add shredded chicken)


Preheat oven to 400 degrees

Take each pita and carefully slice around the edges, separating each half into a top and bottom so that each pita becomes two very thin rounds. Spread 1 T hummus on each round. Top with chopped vegetables, a little bit of onion, and a little bit of salt and cracked pepper to taste. Sprinkle 1/4 cup of cheese on each piece. Bake 8-10 minutes or until pita crust gets crunchy and cheese melts.
