Simple, tasty tacos at Taco Sherpa

One of the things I've learned as I try to eat more locally grown produce is that simple is good.

I like a fancy French dish as much as the next guy, but sometimes a meal of fresh garden vegetables and a protein is pretty tasty as well.

I recently wandered over to Warehouse Row on a Thursday and was glad to see that the food trucks were there. The menu for Taco Sherpa was about as simple as it gets. You chose between three proteins -- dak galbi (spicy chicken), galbi (pork marinated in a sweet and spicy soy-based sauce), or bulgogi tofu (marinated in Korean bulgogi sauce.) I chose the latter.

The toppings were cucumber, radish, cabbage, cilantro, sesame seeds and sherpa sauce, which was advertised as spicy, but I did not find it to be so.

You can have three tacos, or two tacos and one side, in this case it would have been rice. You also can order a rice bowl, which is the same ingredients served with rice instead of corn tortillas.

All of the ingredients work well together to create a fresh, deceptively simple meal that is a blend of soft and crunchy and sweet and spicy.
