New dishes at Abuelo's promise intense flavors - July 4-Aug. 19

Abuelo's, which includes a Chattanooga location at 2100 Hamilton Place Blvd., has introduced four new entrees to its menu that promise "the finest, freshest, most robust flavors of Mexico." The new dishes from executive chef Luis Sanchez will be available through Aug. 19.

"The distinctiveness of chef Luis' new House Specialty dishes is truly one of the things that make Abuelo's unlike any other Mexican food restaurant," said Robert Lin, president of Food Concepts International, Abuelo's parent company, in a news release. "The new menu items offer a variety of creative flavor combinations from both interior and coastal Mexico."

The new offering

• Steak Wrapped Chile Relleno -- Roasted poblano pepper filled with blended cheeses and wrapped with a tender strip of wood-grilled steak and topped with a red chile sauce and paired with a shredded beef enchilada.

• Pollo Florentino -- Chicken breast covered with a mushroom brandy cream sauce, Monterey Jack cheese, spinach, corn and roasted red peppers. Served with cilantro lime rice and a vegetable medley.

• Shrimp Fresca Salad -- Plump, chilled shrimp over mixed greens with mandarin oranges, grape tomatoes, radish slices, jicama, honey-roasted almonds and fresh fruit. Served with a sweetly tart honey-lime dressing.

• Filete del Chef Luis -- Six-ounce, center-cut beef tenderloin filet, wood-grilled to perfection and served with Abuelo's signature Papas con Chile.

"Our guests are going to love the intensity of the flavor in these latest recipes," Sanchez said.
