When all other fruit is tasteless, winter brings us the best citrus fruit around. I've been amazed at the grapefruit I've been getting. The best I've had is from Walmart - $3 a bag containing six really big grapefruit. And I plan to save one for making this dish. It sounds excellent.
Roast Chicken with Carmelized Grapefruit
3 chicken breasts
1/4 cup oil
2 large sweet onions cut into 1-inch pieces
2 pink grapefruit, sectioned
1 cup white wine
1/2 cup brown sugar
1 / 3 cup grapefruit juice, reserved from sectioning
1/4 cup chopped fresh parsley
6 minced garlic cloves
In large skillet, heat oil. Sprinkle chicken with salt and pepper. Cook chicken on medium-high heat, skin side down, about 4 minutes or until browned. Place chicken in shallow roasting pan. Add onions and grapefruit. Combine wine, brown sugar, grapefruit juice, parsley and garlic. Pour over chicken. Bake at 350 F for 30 minutes or until chicken is fully cooked. Makes 4 servings.
