Chattanooga Wing Company celebrates grand opening

It's official.

Chattanooga Wing Company is open and ready to prove people's preconceived notions about chicken wings and McCallie Avenue wrong.

"I love to see people's reactions when they try something they've never tried before, especially when they originally question it and end up liking it," said owner Brandon Ellis.

After winning a local chicken wing contest this summer, Ellis said he knew he was onto something. Before making it to your plate, Chattanooga Wing Company wings are marinated for 24 hours, smoked in an underground smoker, grilled, marinated again and flash-fried. Then, they're topped with a signature sauce of your choice, ranging from typical mild and hot Buffalo styles to unique options including Caribbean Island Fire, 1505 Garlic Parmesan and Smokey Whiskey River.

Originally Ellis said he sold wings and Asian-inspired noodles from a pop-up tent at places like Moccasin Bend Brewery and Heaven & Ale. He planned to start a food truck business, but with colder weather approaching, a brick and mortar restaurant made more sense.

The noodles and wings he started with will always be staples on the menu, but new additions like smoked chicken empanadas, chicken salad, ground sirloin sliders and even a vegan turkey club have also joined the lineup at Chattanooga Wing Company.

"When they [customers] come, I want them to come and forget about the location and the stereotype of the location and just enjoy it," Ellis said in regards to the restaurant's 2109 McCallie Ave. location. "It's an experience to me. It's a good place to get away from work for lunch and get away from the hustle."
