Four artists combine talents to launch seasonal dinner series

Tim Hinck and Chef Jeremy Auspitz of St. John's Restaurant are combining their talents to create a new dinner series that is part dinner, part concert, art and theater.

Filia: A Sensory Adventure is an 11-course tasting event that will showcase local ingredients paired with rare wines from France, Spain, California and the Canary Islands. The first dinners based on the seasons of the year take place Thursday night and Friday, March 29-30, at 1617 Rossville Ave.

Hinck says the series is the result of months of collaboration between himself, Chef Auspitz, poet Whitni McDonald and artist Trever Perez.

Upon stepping through the door, guests will be immersed in the world of Filia, a curious, 8-year-old girl, who represents spring in the seasonal series, Hinck says. Each subsequent dinner will be themed to a different member of Filia's family, who will also represent one of the remaining three seasons.

Hinck describes the evening as "a playful integration of imagery, food, wine and environment."

There will be two seatings each night: 5:30 and 8 p.m. Only 16 tickets are available per seating. Guests must be 21 or older to attend. Hinck advises arriving 10 minutes or more early since finding parking may be difficult.

"This is the first of four, seasonal sensory experiences in the series. Summer will be Filia's father, then Autumn, finishing in winter. Even if guests can't get tickets for this dinner, they will know the series continues and can plan to attend in the future," says Hinck.
