CBC creates new Cuban sandwich

The Chattanooga Billiard Club Banquet and Conference Center is introducing new, from-scratch dishes on the a la carte menu.

"We've got a couple of new menu items," says CBC head chef Tyler Westbrook. "We just put a Cuban sandwich on the menu. It's something we just started that's really good."

The Burns Tobacconist Cuban is CBC's new flagship sandwich with marinated pork loin, slow roasted and shaved in house, served on a French baguette with capicola ham, melted Swiss cheese, spicy mustard and dill pickles.

Westbrook also added the black and bleu steak wrap prepared with blackened sirloin, bleu cheese, lettuce, tomato and red onion wrapped in a flour tortilla.

The a la carte menu is available Monday through Saturday from 11 a.m. to 3 a.m. and Sunday from 1 p.m. to 3 a.m.

"We're definitely choosing some interesting stuff with the nightly specials," Westbrook says.

"You can almost categorize the specials as upscale new American-style cuisine. We have a little bit of something for everybody."

Westbrook is proud of the burgers CBC has on the menu. He says each burger starts out as the finest USDA choice chuck before being ground twice, hand-patted and char-grilled.

For guests who don't have time to sit and order from the a la carte menu, CBC offers a very fast and affordable cafeteria-style lunch in the Tropicana room Monday through Friday from 11 a.m. to 2 p.m. The $7.25 lunch includes a choice of one meat, two vegetables, cornbread or roll and iced tea.

The selection of meats and vegetables changes each day.

"It's fast," Westbrook says. "There is no waiting. We do a really nice meatloaf on Wednesday and a baked tilapia with dill butter sauce on Thursdays."

Meals can be washed down with a wide variety of spirits, including beers like the new Hoptoberfest, which is one of many seasonal beers on tap at CBC.

"It's not just Miller Lite," Westbrook says. "We have a few interesting micro brews and high-gravity beers."

For football fans, 10 televisions at CBC provide an opportunity to gather and cheer for their favorite team while throwing darts or eating a meal.

CBC offers a variety of banquet rooms for catered events with the ability to provide plated dinners, buffets, and hot and cold hors d'oeuvres. By mid-October CBC will not only be able to cater food, but also cigars, using an Airstream trailer outfitted as CBC's mobile cigar lounge.

"I'm very excited about it," says CBC proprietor Phil Windham. "It'll be a fun project. We can bring the cigar lounge right to you."
