A little place with big flavor: Standifer Gap food truck expands to meet demand

A little more than a year ago, Marla Sundean decided to quit her job and strike out on a new business venture in a little trailer along Standifer Gap Road.

Today, that business, Fat Boy's Roadside Eats, has more than 10 times the menu items than when it opened - all of which began as specials but remained due to popular demand, she said.

Sundean, her husband Jon and her son Ryan, who happens to be a chef with a degree from Le Cordon Bleu culinary arts program, named the little establishment Fat Boy's as a nod to the Harley Davidson she and Jon used to take on trips.

The American cuisine, barbecue-focused food stop also offers a variety of vegetarian options. Outdoor seating options and carry-out options are both available.

"When we first opened I used to watch cars drive past and think, 'We're right here, please stop,'" she said.

Now, the business is eagerly working to meet its ever-increasing demand. Sometime soon, Sundean said, she is considering opening up a bigger location, one that would allow for indoor seating.

"Plus," she laughed, "air conditioning would be amazing."

Fat Boy's is at 8106 Standifer Gap Road. The business is open Sunday-Friday from 11:30 a.m. to 8 p.m.
