Recipe: Korean Barbecue Bangkok Burrito

Korean barbecue beef burrito

Korean-style beef slow-cooked with flavors of ginger and garlic is combined with spicy kimchi, fresh herbs, rice and Sriracha mayo to create this scrumptious fusion dish.

Servings: 5 burritos

What you need

For the Korean barbecue beef:

  • 2 pounds top sirloin
  • 2 pears, peeled and cut into chunks
  • One 2-inch knob of ginger
  • 4 cloves garlic
  • cup soy sauce
  • cup brown sugar
  • 1 tablespoon sesame oil

 

For the burritos:

  • Cooked rice
  • Cilantro, basil or green onions
  • Kimchi
  • Sriracha mayo or Yum Yum sauce
  • Large flour tortillas

 

What you do

1. Thinly slice the beef and pulse the pear, garlic and ginger in a food processor. Put all the ingredients for the beef in a slow cooker; cover and cook on high for 3-5 hours, or until very tender.

2. Cook the rice, mince the herbs and prepare the sauce.

3. Lay a flour tortilla flat on a piece of foil. Place the rice, meat, herbs, kimchi and sauce in the middle of the tortilla and roll the burrito. Roll in foil to freeze and heat later, or serve immediately.
