"We have food for almost everyone," said district manager Leon Chen, whose brother Leo Chen is general manager of the new location. "Maybe half of the people who come to our restaurant aren't coming for Chinese food."

The Hibachi Grill is holding its official grand opening ceremony with a ribbon-cutting May 17 at 10:30 a.m. Owners, employees and supporters, including the East Brainerd Chamber Council, will attend the ceremony and formally welcome the new business to Chattanooga. The restaurant is one of 50 Hibachi Grills across the United States, with locations in Knoxville, Nashville and now in Chattanooga. Hibachi Grill owners are planning to open several additional locations in the surrounding area.

"We have American food, Spanish food, Japanese food, Chinese and Korean," said Leo Chen, who will offer hundreds of recipes on the buffet daily. "We serve a lot of seafood here. We have a sushi bar with sushi and sashimi."

Chen said he foresees the restaurant being very popular and is confident all his guests will find something they like on the buffet. Recipes will change often as chefs respond to customers' demands for their favorite dishes, whether it be lasagna, pizza, steak or the restaurant's specialty recipe, pepper shrimp. The lunch and dinner buffets will offer different selections. The dinner buffet begins at 4 p.m. and presents a larger variety of seafood, such as salmon and butter shrimp.

"We'll have a hibachi grill station where guests can get their food made fresh," Chen said.

The Hibachi Grill is located in the former Ryan's Steakhouse building at 6734 Lee Highway. The new owners recently completed renovations. The entrance area features a large fountain with lights and the soothing sound of running water. The main dining room is separated into a main floor with buffet and food stations surrounded by customer seating. There are two private rooms for hosting parties and events.
