B's Sweets cooks up new ideas for breakfast

B's Sweets, located at the foot of Signal Mountain on Signal Mountain Road, is now serving coffee and breakfast items from 7:30-10 a.m.

"I was thinking about when I worked downtown and really wanted something on the way quick that I could stop in and pick up," said owner Brianne Hager, who lives in the Mountain Creek Road area. "We're on the right side of the road, so you can pull in and go straight downtown. I always thought that would be great."

Customers like that they can easily find a place to park right in front of the door, she added.

The new breakfast items include pastries such as multigrain croissants and scones in blueberry, white chocolate-raspberry and apple-cinnamon flavors. Blueberry muffins are always available, and Hager also rotates between apple-cinnamon-pecan and chocolate-chocolate chip flavored muffins depending on the day.

"Blueberry is the standby because everybody loves the blueberry muffins," she said. "That and the blueberry scones are our No. 1 sellers."

Hager said she is open to customer suggestions, and she recently added several quiches to the menu to give customers a savory option with protein. Flavors are Swiss, mushroom and spinach (Hager's favorite), cheddar-bacon and three cheese.

Coffee is available in cafe blend and French roast flavors in 12- and 16-ounce sizes. Customers who bring in their own mug receive a significant discount, she said.

Also new at B's are the eclairs, made from a traditional recipe Hager got from her grandmother. They are filled with Bavarian cream and topped with chocolate ganache.

"They're just flying off the shelf, I guess because nobody else around here makes them," said Hager. "They're made fresh daily, and I make at least two batches a day."

After the success of her gingerbread house workshops for kids around Christmastime, she has also decided to offer her space for cupcake-baking birthday parties. Party-goers will mix dough and bake two cupcakes each to decorate, one to eat at the party and one to take home.

"It goes back to my love of baking with my grandmother," Hager said. "If I can pass that love of baking and decorating on to another child, then I think that's great."
