Person in charge was unable to demonstrate knowledge; could not respond correctly to the questions as they related to the food service operations conducted at the establishment. Inspector observed food on steam table, in stand up cooler and walk-in cooler not covered. Slicer, utensils and knives with old food accumulation. Shaved beef sitting on table at 106 degrees without any knowledge of how long and purpose. No consistent date marking procedure. Treated wood above food prep area holding microwave up. Live roaches found.
