Best and worst restaurant inspection reports for the week ending Jan. 18, 2022

The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

To file a health-related complaint, call the Department of Environmental Health at 423-209-8110. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.

Reasons including sanitizer buckets and three compartment sink are filled with solution that is measuring 0ppm ammonia. Several foods held in holding units are not holding at proper temperature. Three spray bottles containing chemicals are observed as unlabeled throughout the kitchen. Bottle of juice observed stored in ice bin that is used to serve ice for consumption. Cup in barbecue sauce does not have handle for scooping. Food debris/accumulation observed on can opener blade.

Reasons including omelette batter uncovered. External food/object from above falling into batter. Multiple foods in low boy cooler next to griddle at 48 - 55 degrees. Cheese and crepes too high in cooler. Food must be at or below 41 degrees. Bag of plastic lids stored on floor. Multiple food containers with carbon build-up or in poor repair. Dishwasher and area around dirty. Excessive food/grease build up around griddle. Multiple food and non-food surfaces dirty.

Reasons including employees not washing hands as needed between tasks. Observed employee sweeping floors then preparing food/donning gloves without washing hands. Excessive food debris build-up behind/underneath equipment. Adequate cooling methods not provided. Uncovered/unprotected food products noted in walk in cooler. Wet wiping cloths stored on working surfaces and not in sanitizer solution. Excessive trash/grease spilage noted around dumpster in refuse area.
