The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

To file a health-related complaint, call the Department of Environmental Health at 423-209-8110. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.

Reasons including numerous food and non food contact areas dirty throughout facility. Adequate cleaning and sanitizing frequency not provided. Drawer holding raw chicken tenders temping 45-50°F. Ribs cooling at room temperature upon inspector arrival. Foods kept in reach in freezer stored uncovered. Dishes stored wet nested. Wash water soaking dirty utensils 95°F. Ice build up in walk in freezers. Handsink by dishwasher filling up with water and leaking onto floor.

Reasons including multiple reach in drawers holding TCS foods between 47-57°F. 10 pounds raw chicken embargoed, 5 pounds turkey sausage embargoed. Raw catfish, raw trout were 47°F and placed on heavy ice bath to help keep products 41°F and below. TCS foods must be kept 41°F and below. Dishes stored wet nested. Fridge unit leaking on floor in produce cooler. Leaking water puddling during in produce cooler during inspection. Excessive ice build up around walk in freezer unit, around door area. Door not closing shut due to ice build up. Multiple reach in cooler drawers dirty between gaskets. Excessive grease build up around deep fryers in prep area. excessive grease build up around fry hot lamp.

Reasons including salsas on prep bar holding 49-50°F upon inspector arrival. Salsa was moved to a heavy ice bath placed on cart until prep bar is repaired and able to hold TCS foods at 41°F or below. Reach in cooler behind prep bar holding TCS foods 44-46°F. TCS foods must be held at 41°F or below. Chemicals stored in bottles with no lid and unlabeled. Thermometers in reach in cooler by prep bar broken and unreadable. Dishes stored wetnested. Reach in cooler near prep bar handles in poor repair. Walls dirty around rear chemical area, ice machine.
