Watching what you eat and sticking to a new diet regimen may be on your list of New Year's resolutions. Although that might spark a fear of missing out on your favorite dishes, Marlene Guffey at Countryside Cafe is here to tell you there's no reason to worry.

"We have several different options for any diet regimen that people choose for the new year," Guffey said. "All of our vegetables are cooked without meat products, and since we cook our foods from basic ingredients, we know what is in each item."

Among noteworthy menu items that Countryside is offering is a Keto diet plate with a ribeye steak and veggies. For those exploring the Mediterranean diet, Countryside has fish and veggies.

"Our menu changes daily, but folks can look for our daily specials on Facebook at 10:30 a.m. and 4 p.m.," Guffey advised for the rotating dishes.

More options for dieters include a whole-food-diet veggie plate, and even a low-carb and low-fat version of chicken and veggies.

"If you are simply trying to eat whole foods or cutting back on portion size, we can even help with that, too," Guffey said. For example, check out the sugar-free apple pie, delicious without added extra sugar.

Countryside Cafe highlights a special deal on Wednesdays: Buy one dessert, get one free. Guffey insists customers try the Ooltewah restaurant's banana pudding, which was ranked fifth-best in the state in an online survey. It's served warm every day.

Thursday offers a great deal for families to dine out: Kids under 12 eat for just $1.99.

For couples planning ahead to Valentine's Day, the local restaurant has something special in the works.

"We are giving away another Gatlinburg bed-and-breakfast trip for Valentine's week," Guffey revealed. "Every time you come in, you can register for that and other gift cards to be given away."

Countryside continues to offer catering for any event, large or small, as well as delivery or pickup services. The restaurant's ever-popular, pick-your-own menu option gives parties a vast selection from which to choose.

When asked if she could describe Countryside using one word, Guffey said without hesitation: homemade.

"That's why we have won Best of the Best for many years," she explained. "We have the best country cooking in town, with the largest selection of meats, vegetables and desserts - and it's all homemade."
