Mojo Burrito coming to Cambridge Square

Vegetarians and vegans will have one more option when dining out in Ooltewah with the addition of Mojo Burrito to Cambridge Square. And the opening of the the local food chain's fourth location has owner Eve Williams considering offering Mojo's popular vegan cashew cheese as a full-time menu item.

Currently, the cheese is only offered in the three existing Mojo Burrito locations (Red Bank, St. Elmo and East Brainerd) each Monday until it runs out.

"But opening the new location is an opportunity to focus on the menu again and focus on changes or additions," Williams said. "It's been a couple of years since we've done that ... and the [cashew] cheese is something a lot of our customers have asked about."

Though the new location, former home of Wired Coffee, does not yet have an opening date, Williams said construction work is set to begin as soon as permits are acquired. From then, she said, it should be ready to open in roughly 90 days.

"We're really, really excited," Cambridge Square spokesman Jim Cheney said of the new addition, which will bring the total number of tenants in the commercial portion of the square above 20. "Eve has been a mainstay in the Chattanooga restaurant scene for a long time."

Williams said the restaurant has been in talks to come to Cambridge before, but the timing was never right. When a planned Hixson location fell through, the opportunity to connect with the area's Adventist population, many of whom are vegetarians, as well as the rest of the area, became too good to pass up.

Though the business serves meat and has a variety of options, they are only included when asked for.

"Because of our audience out there, I think we'll get one step closer to reaching new people," Williams said. "We're excited."

The restaurant uses the locally made Cha Cha Vegan cashew cheese, made by North Shore's Cashew restaurant owners.

"We try to support local whenever possible," Williams said, adding that locally made Hoff Sauce hot sauce is also used in Mojo's recipes.
