Cheese Dip mixes authentic and American-inspired Mexican cuisine

A little more than a decade after immigrating to the United States from Mexico, Rosio Chavez and her family operate two successful restaurants in North Georgia. Now, the family is hoping their third restaurant, Cheese Dip, will find the same success along Bonny Oaks Drive.

"Coming from a different country, learning a different language, having to adapt, it's a dream come true," Chavez said of the new restaurant, where she is the owner and chef.

Cheese Dip is a blend between the authentic Mexican food Chavez grew up on and then made for her family, and Americans' love of Mexican-inspired cuisine. Even the name is a nod to something created in the U.S. but with roots in Mexico.

For those looking for a traditional taco - topped with just meat, onions, cilantro and lime juice - Chavez can provide it, since everything is customizable based on the guest's selection of a corn tortilla taco, burrito or bowl plus a wide range of ingredients popular in both countries.

Those looking for something specialized, unique, vegetarian or vegan will find a variety of options available as well, she said.

"I just want the people to know we have something for everyone," Chavez said.
