Community News Dipped Fresh owners open new Ooltewah restaurant

Local restaurateurs Antonia Poland and Cynthia Wood are opening an upscale meat-and-three at Ooltewah's Cambridge Square. Called Davis Wayne's, the restaurant's soft opening is Monday, Oct. 1 and will continue for two weeks. During that time, the restaurant will serve a scaled-down menu during limited hours, 11 a.m. to 4 p.m. Full lunch and dinner service will begin Oct. 15.

Poland and Wood said they closed their restaurant in Coolidge Park, Dipped Fresh, three years ago to focus on their catering business, Dipped Fresh Catering. Their sales have tripled since then as they've built up their clientele, they said.

Fans of Dipped Fresh Catering can now find some of their favorite dishes from the catering business — such as slow-cooked pot roast, chicken Parmesan, green beans, and macaroni and cheese — on the menu at Davis Wayne's.

Wood said the menu is focused on comfort foods, but with a modern-day twist. They've tweaked recipes to make them healthier, she added, such as braising collard greens with smoked turkey tail instead of ham hocks.

The restaurant's name is a combination of Wood's stepfather's last name (Davis), and Wayne, the first name of her father, who passed away when she was young.

"I was fortunate enough to have two great fathers," said Wood, who's now fortunate to have two great businesses as well.
