Best and worst restaurant inspection reports for the week ending Oct. 19, 2021

The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

To file a health-related complaint, call the Department of Environmental Health at 423-209-8110. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.

Reasons including person in charge does not have a current Food Manager Certificate. Several foodborne illness risk factors out of compliance. Additional training for manager and staff is required. Sanitizer bucket was observed empty upon arrival and dispensing at 0 ppm in machine. Observed driveway concrete cleaner stored on shelf next to liquid butter. Debris observed on handle of walk in refrigerator. Accumulated food debris on outside of bulk food bins. Food debris observed on wall behind prep table near walk in unit. Employee personal items observed in food prep areas (purse). Store in designated area.

Reasons including dishwasher machine at less than 50 ppm. Noodles and tempura shrimp cooked the day before not date marked. Rice used for Hibachi not properly time stamped. Multiple flies seen at time of inspection. Multiple boxes containing food stored directly on freezer floor. Walk in freezer floor with excessive ice build up. Multiple staff personal drinks in food areas and not in designated areas.

Reasons including not using time for sushi rice correctly. Rice was unlabeled. Using bleach in excess of 200 ppm at sanitizer buckets. Missing thermometers in stand up coolers. Food boxes stored on floor of walk in freezer. Utensils stored in room temperature standing water.
