The owners have added a half-dozen Korean dishes to the menu, including Galbi (marinated, barbecued short ribs, which take about 40 minutes to cook), Bulgogi (marinated, grilled beef) and three noodle dishes.
It's not on the menu, but our waitress brought us - and then refilled, at no charge - a small plate of fiery Korean kimchi (pickled cabbage).
The addition of a Korean chef may presage the addition of more Korean dishes but at least for the moment the area's most authentic Vietnamese menu is safe, and for the most part the quality of the food hasn't suffered in the transition.
The restaurant continues to draw Asian customers, a very good sign; at lunchtime on a recent Sunday, the restaurant was fairly crowded and the clientele was overwhelmingly Asian.
The new owners have walled off parts of the strip-center storefront to create private dining areas, shrinking the size of the main dining room, which has gotten a pretty good spruce-up (it had gotten a bit shabby). Many of the booths are gone, so most of the seating is at tables.
