Rising Interest

According to news reports from the early days of the pandemic, flour became a seriously scarce commodity for a while.

I didn’t notice. The same two bags have probably been sitting in my kitchen since we moved in five years ago. I have two because I invariably forgot the other existed and bought some (more) for a particular recipe – which assuredly wasn’t bread, the cause of everyone else’s bulk buys.

I love fresh bread, but the rise of bread-baking in America somewhat surprised me. Perhaps that is because I prefer to eat it. Or perhaps it’s because I favor the less rigid methods of cooking as opposed to baking.

Still, I can see why so many would turn to baking in the midst of such uncertainty. There is structure in the process and comfort in the outcome.
