Side Orders: UnCorked set for May 30 at Renaissance Park

Chef Charlie Loomis is used to cooking for crowds at his St. Elmo restaurant, 1885 Grill, but when it comes to cooking for hundreds, well

“Things can get a little bit intense,” he says.

That may seem like an understatement to some, but you’ll find out how he does it rather seamlessly at UnCorked, an event to benefit the Chattanooga Symphony and Opera scheduled from 6:30-10 p.m. Saturday, May 30, at Renaissance Park. There will be many restaurants serving some of the best items on their menus and showcasing the talents of their chefs.

“We typically cook a lot of the food off-site in order to not compromise quality,” Loomis says. “Cooking at the location of the catering combined with the fact that a lot of us are early risers — we will come in early in the morning to handle prep for larger events in order to not disrupt the kitchen — helps us remain successful in our off-premise events.”

UnCorked is the largest fundraiser held every year for the CSO. “It’s very important to our operating budget,” says Molly Sasse, CSO executive director.
