I made my second visit to St. Maarten in the Lesser Antilles this summer and enjoyed so many good flavors of the Caribbean every day. Now, with Levi Roots’ new cookbook, “Caribbean Food Made Easy,” I can have it at home any day I want. Roots is a popular musician, cooking show host on the BBC network and a native of Jamaica. His grandmother taught him the basics of Caribbean cooking, and he took it from there, creating his own brand of island cuisine. Here’s one of his creations that emphasizes the simplicity that can be found in Caribbean dishes. This is one I plan to keep in my files.

Golden Tilapia in Lime And Thyme

4 skinned tilapia filets (about 1 pound total) or other firm white fish

Juice of 3 limes

2 tablespoons all-purpose flour
