7015 Nashville Street, Ringgold (NGA); Reasons including no PIC on premises upon arrival for inspection. Asked repeatedly which employee was acting as the person in charge and no employee stated to be the acting as the person in charge. Observed wet wiping towel being stored inside of the hand washing sink. Observed several containers of white sauce inside of the prep table unit (bottom of prep table unit) cold holding above 41 degrees Fahrenheit. Also observed cooking sauce made with hoisin sauce sitting out at room temperature next to grill. The manufacturer label on the container of hoisin sauce reads that it must be kept refrigerated after opening. Multiple storage containers with various food items not labeled next to grill prep. Wet wiping cloths being stored all over the kitchen on equipment rather than in buckets of sanitizer solution. Utensil used for scooping cooked rice (that was being hot held in rice cooker) being improperly stored in between use. The utensils used for scooping rice were stored in a plastic container that was not clean to site and touch, Due to recurring scores of C’s and U’s, failure to comply with risk control plans, plan of correction for good retail practices, and terms of informal hearing (conducted on 01/23/2020), permit suspension is required by health authority.

Rice holding at 115*F on steam table. Insecticides/maintenance products not stored in a manner to prevent contamination. Personal items not properly stored throughout to prevent contamination. Fly glue strips stord above prep surfaces in prep area. In use utensils stored in standing water.
