Chicken wings still being smoked at home of owner, home kitchen is not permitted so wings are from unapproved source. Home canned jars of food in fridge, cannot use home canned food to sell food to public. Food discarded. Cooler was above 50 degrees; food was placed in cooler never reached below 41 degrees, all food was discarded. Evidence of oil being discarded on ground at deck and at ditch behind building.

Vacuum packed meats were cooked and vacuum packed at friends house per PIC. Packaging and food prep from unapproved food source. Tofu veggie mix left out at room temperature by handsink temping 71°F. Asked kitchen staff what time Tofu mix was cooked, and was told roughly around 9am and mix had been sitting out at room temperature since. 2 pounds of Tofu mix embargoed. Employee cell phone and beverage stored on food contact surface near foods being prepped.
