I didn’t learn it from Google translate, or the New York Times Cooking section, which dubbed it a “Balkan burger,” or from chef-turned-rapper-turned-food media darling Action Bronson. I learned from Amir Crnalic, owner of Tata’s Grill.
It’s: PLYESS-KA-VEE-TSA, and it’s the “P” in Tata’s P-Burger.
