* What: Big River’s new summer menu carries the spirit of the Caribbean with such offerings as the Island Steak Tacos. The centerpiece of the dish is skirt steak seared to a perfect medium, then topped with lettuce, pico de gallo and tangy chimichurri sauce. Two come to a plate, served in a crispy blue corn tortilla and wrapped in a soft white tortilla. Pepper Jack cheese is sandwiched between the tortillas for a flavorful touch. Craig Barrett, general manager, said the zippy garlic and citrus tones enhance the smoky, caramelized flavors of the grilled skirt steak. The summer menu where you’ll find the tacos is available through Aug.1.
