* Where: Hennen’s, 193 Chestnut St.
* What: One of the premiere appetizers on the summer menu is the shrimp salad over fried green tomatoes. It’s a take on traditional Low Country fare, said Charleston, S.C., native Josh Wool. The dish starts with Atlantic white shrimp, poached and combined with red pepper, celery, onion, tarragon mayonnaise and a touch of mustard. The salad is placed atop a cornmeal-crusted fried green tomato. “It’s a great summertime dish,” Mr. Wool said.
