* What: The new spring menu is filled with enticing entrees, but if you have to pick just one, manager Miguel Morales suggests the Seared Scallops With Spinach and Orzo. It’s a plate of seven Northern Atlantic sea scallops served on a bed of imported Mediterranean orzo and sautéed spinach. “People are loving it,” Mr. Morales said. “There are more scallop lovers in Chattanooga than I’d ever imagined. We’re selling 14 to 15 of these dishes every night. The whole dish has a lot of great flavor to it.”
