KELLEY SAYS: We haven’t repeated ourselves in this monthly feature over the last five years, though we have used dishes from a previous feature as part of another.
BARRY SAYS: Any time we can use your pimento cheese recipe or your homemade pickles is a good thing in my opinion.
KELLEY: Anyway, so when I was at Fresh Market the other day, I saw that their Hatch chilies had arrived. This is the only time of year you can get them and the only place in town I know of that sells them. There may be other groceries that sell them, but I’m not aware. So I had to do another Hatch cheesecake. This time, however, I wanted to switch up the recipe from last year. So I added apple, chorizo and different cheeses, thinking “Fall is here.” I did add additional chilies to the batch and it seems as though the Hatch chilies this year are a little hotter.
BARRY: I’ll say. The word “cheesecake” lends one to believe this is a sweet or even dessert-like dish. It is neither.
KELLEY: Obviously, you can make it hotter or milder to your own liking and, honestly, this was a little hotter than I intended, but it was still delicious.
