Fans of IPAs who can’t get enough hops through their craft beer consumption can turn to another sort of brew – Velo’s BunnyHop – to get their fix along with a dose of caffeine. The brainchild of former employee Cody Baldwin (who now owns and operates local hostel En Root House with wife Lizzy), BunnyHop is a hopped cold-brew coffee. Introduced at Velo during the summer of 2015, it’s been growing steadily in sales and popularity ever since.
“We had seen a couple people use hops creatively in non-alcoholic drinks, and we had been playing around with coffee sodas here in the shop, but we hadn’t seen a coffee-centric drink that employed both hops and carbonation in the way we imagined,” Velo owner Andrew Gage says of the drink’s origins.
The concept was simple: combine a single-origin (not commercially blended) coffee, a single-origin local honey and a single variety of hops.
