Live roaches in wall at prep sink drain. Flies in kitchen.

2122 Dodds Avenue; Reasons including staff not familiar with how to safely hold food temps, need for designated hand sink. Fridge not cold enough to hold food below 41, no sanitizer in kitchen. Food being held at room temp due to lack of adequate space. Using electric stove top without hood. Hand sink is covered up with foil so not washing hands. Food held at room temp below 135, rice 119, beef 80, chicken 90. Flies present in kitchen, food not covered.

Raw meats stored over produce in the reach in cooler. Several foods date marked more than 7 days ago-embargoed 5 lbs of refried beans. Coolers not working well or adequate to hold all TCS foods. Grease buildup on several non food contact surfaces. Several non food contact surfaces in the kitchen were dirty. Floor in poor repair.

Handsink in kitchen was clogged with food debris and water. No date marking on prepped or opened TCS foods throughout entire establishment.Frozen chicken tenders stored uncovered and unpackaged on reach in freezer wrack. Multiple foods stored uncovered in cold storage. Excessive ice build up in majority of reach in freezers.

33 Legion Street, Ringgold, Ga.; Reasons including employee drinks in unapproved locations and in unapproved cups. Employees were drinking out of plastic water bottles with twist tops. Time as a public health control procedures are not being followed. Observed no times or temperatures written on or near any of the pans of TCS foods using time as a public health control. Employees preparing food without wearing hair restraints.
