Best and worst restaurant inspection reports for the week ending Oct. 25, 2022

The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.

To file a health-related complaint, call the Department of Environmental Health at 423-209-8110. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.

74 Sushi Nabe Japanese Restaurant 

110 River Street

Reasons including sink next to sushi bar not stocked with soap. Raw eggs stored above melons in upstairs walk in cooler. Raw fish over celery in reach in cooler downstairs. No sanitizer present in sanitizer bucket at sushi bar. Sushi rice stored at room temperature at 66 degrees Fahrenheit. Rice was not time stamped for time as a public health control. Multiple chemical bottles unlabeled. Debris on knives stored at knife hangers. 


80 Tazikis 

432 Market Street

Reasons including multiple food workers not washing their hands before beginning food prep. Several workers not washing their hands when entering the kitchen or when changing tasks in the kitchen. Hand washing sink was blocked by boxes in the back kitchen area. Several scoops without handles in food or with handles that were touching the food. Inside of the ice machine was dirty—more regular cleaning required. 


82 Lillie Mae's Place 

4712 Dayton Blvd.

Reasons including dishmahine is testing at 0ppm sanitizer at the time of inspection. Chili and sweet potatoes are holding at 104 and 91. Kitchen manager stated they were not reheated properly prior to placing in steam well. Cooked sausage under heat lamp holding at 120F. Food must be hot held at 135F or above. Fly swatters stored on shelf in food storage area. Food debris on top of dishmachine. Food debris and black accumulation from refrigerator gaskets.

1210 Taft Highway

Reasons including wiping cloth bucket with zero sanitizer on floor of prep table. Fried chicken holding at 112 upon arrival. Facility uses time as a public health control for chicken but it was not time stamped and no written procedures are available for review. Spray bottle near warewashing area observed unlabeled. Ice scoop stored on top of machine. Store in a manner that is easily cleanable. Most recent health inspection not posted.
