Side Orders: Martha Stewart’s veggie-filled pasta salad calls for spaghetti noodles

After enjoying the hospitality that the ancient city of Florence, Italy, offers, eating my way along the cobblestone streets and popping into trattorias and other popular restaurants in this wonderful Italian city, I really never thought I’d wanna look at another bowl of pasta again.

At least for a while.

But then an email from Martha Stewart came my way with a pasta salad that sounded intriguing, so much so that I threw caution to the wind and gave my scale a new home in my closet. Out of sight, out of mind.

Pasta salad is one of those side dishes that works with just about anything, and one is no different. It’s loaded with fresh veggies, so there is a healthful angle to it giving it a lot of texture. And while many pasta salads call for bowtie pasta or small pastas, this one calls for spaghetti, which is a little different from others. And the tangy dressing makes it very flavorful.

All in all, this pasta salad will replace one that I’ve been using for years. It was perfect with our Easter ham, and leftovers were great with our grilled steak a couple of days later.
