Side Orders: Welcome summer with grilled steak salad

It’s hard to believe that another Memorial Day has rolled around once again. Has a year gone by? It’ll be hard to miss it with all the grills smoking throughout the Scenic City. If you don’t see them, you can certainly smell that delicious smoke as burgers, hot dogs, steaks and chicken are smoking.

I’ll be lighting up the charcoal myself, but doing it a day early so that I can make a beautiful steak salad to spread on a platter and put out on my Memorial Day buffet. That’s right, I love having a big spread of food for friends and family, one that goes beyond burgers and baked beans. The salad offers them something a little different. Yes, I will still have burgers and baked beans, but it never hurts to up the ante when it comes to side dishes. The salad, though, could also serve as an entrée for those who really don’t want a burger or hot dog. It’s nice to offer something else, don’t you think?

The more texture there is in a salad, the more craveable it becomes. This one has all the crunch, along with some creaminess, too. It has a little bit of everything — sweet, savory, salty, spicy, sour and that special umami taste you just can’t put your finger on. And the beef is phenomenal here. It is first soaked in a delicious marinade, then quickly cooked on the grill or stovetop. You may be making this beef noodle salad all summer long because not only is it wonderful to eat, it’s easy to make ahead, keeping your summer cooking duties to a minimum. The steak, dressing and noodles can all be made ahead. This means all that’s left to do is some chopping and tossing come serving time.
