Your Monday at a glance:

Good morning, Chattanooga and Happy New Year!

For Chattanooga chef Blackwell Smith, gluten-free living is more than a fad. It’s a necessary way of life.

After having a bad reaction to eating a sandwich, he removed multiple possible allergens from his diet and added them back one by one.

“Everything was going great until I had some wheat, and I was right back to the feelings I had before,” he said.

While it wasn’t fun at first, he realized he could find ways to make gluten-free eating enjoyable and now teaches gluten-free cooking classes online.

Here’s how a gluten intolerance changed the course of Smith’s culinary life. Also, enjoy a recipe for Bechamel wild rice and potatoes that he says is both gluten-free and delicious.
