Roasted Cinderella Pumpkin Ravioli has returned to the menu at Easy Bistro, 203 Broad St.
Everything is made from scratch in this seasonal favorite, starting with the pasta, which is stuffed with fresh roasted pumpkin and served over wilted arugula, toasted almonds, brown butter and crushed amaretti cookies.
“This is a return engagement every fall and a favorite for returning customers as well as new ones who try it for the first time,” said chef/owner Erik Niel. “It’s a fun combination of fall flavors and a lighter ravioli dish, even though it has a little butter in it.”
The addition of amaretti, he said, is a traditional Italian idea, “but the thought of topping ravioli with crushed cookies is a lot of fun.”
