On the menu: Organic beef in Tavern burger

Market Street Tavern, 850 Market St. at Miller Plaza, is one of several area restaurants dedicated to serving local products, from meats and vegetables to breads. One of these favorites at the tavern is the Sequatchie Cove Burger.

* What: Sequatchie Cove Burger.* Price: $8.95 (comes with chips or fries; mac and cheese $1 more).* Hours: 11 a.m.-11 p.m. Monday-Thursday, 11-1 a.m., noon-1 a.m. Saturday.* Phone: 634-0260.

“It comes any way you like it,” said chef and co-owner Aaron Long. “You can build any of our burgers with Sequatchie beef from Bill Keener’s Sequatchie Cove Farms. There’s our regular burger, the Tavern Burger, our mushroom-Swiss burger, blue cheese burger, havarti cheese burger. We have several to choose from.”

The mushroom-Swiss burger is the most popular, Long added. Fresh mushrooms are seasoned and sautéed in olive oil and used as a topping along with melted Swiss cheese. The beef is organic and grass-fed. Burgers are hand-formed into 6-ounce patties, then seasoned and grilled to specification.

All burgers are served on buns made and delivered daily from Niedlov’s.

They come with a choice of one of 10 side dishes, such as fries, chips, sweet potato soufflé or smoked gouda mac and cheese, a house favorite.
