The Chattanooga-Hamilton County Health Department inspects restaurants twice a year and grades the businesses on a 100-point scale. Scores below 70 require corrective action. Restaurants are reinspected if they fail to meet critical standards.
To file a health-related complaint, call the Department of Environmental Health at 423-209-8110. The scores are original and do not reflect on-the-spot changes, which sometimes lead to upward adjustments.

Reasons including PIC is unable to demonstrate knowledge of proper food safety practices. Observed grill cook reach on to floor to retrieve glove and attempt to put on before returning to grill duties without washing hands or using new glove. Dishes and utensils stored inside hand-washing sink in bar area. Microwave food contact surfaces not clean to a frequency to be clean to sight and touch (mashed potatoes) hot held in warmer cabinet below 135 degrees. Cracked flooring/tile throughout the facility that is not easily cleanable.

Reasons including raw chicken thawed out in stagnant water in triple sink temping 70°F. Person in charge said raw chicken had been thawing in sink since that morning. Embargoed 30 pounds of raw chicken. Ground beef left out to cool at room temperature for majority of routine inspection. Numerous raw animal products thawing in stagnant water in sinks, buckets etc. Backdoor left open for entire inspection. Chips stored in BRUTE trash can placed near hand-washing within splash radius. Stored foods must be covered/protected to help prevent product contamination. Multiple foods left uncovered in reach in cooler of lowboy unit. Dishes on drying rack stored wet nested. Racks in walk in cooler dirty. Numerous employee drinks stored near foods to be served in food prep area.
