Reasons include: There was no designated person-in-charge for the kitchen (attempting to share person-in-charge with Subway), there was no certified food safety manager for the kitchen (attempting to share with Subway). The Subway person-in-charge could not provide or otherwise satisfactorily demonstrate during inspection that all food employees and conditional employees are informed of their responsibility to report to management information about their health and activities as it relates to diseases that are transmissible through food. Raw animal foods were stored over ready-to-eat foods — and raw beef was stored over raw pork — in the walk-in freezer, food was being cold held above the proper temperature, unapproved cooling methods were being used, a scoop in breading was not stored with the handle above food level and employee drinks were being stored on the hand-washing sink.
