October of 2024 will surely be remembered for its weather, varied in both terror and beauty. And in the process, in the kitchens and dining rooms of this world, the best food continues to offer comfort or celebration, whichever is needed.

Shall we now help each other cook like this, and with love?

Today’s first request came from Marie-Laure Poire, whose friends are sourdough experts. “I am not a bread baker, but when I read about sourdough biscuits that can be made with ‘discarded’ starter, I consulted my friends. They said no sourdough starter is ‘discarded,’ but just there to be used for things beside a loaf of artisan bread. Maybe sourdough biscuits or pancakes. They have left me with a supply of starter, so I am asking what can be made with ‘discarded’ sourdough starter besides the bread.”

Another reader, JBYM (Just Between You and Me), began her request like this. “I have gone through a lot of my cookbooks looking for lemon chicken. Anything with lemon in the title intrigues me. If your readers have a good recipe for lemon chicken, please share.”

There will always be commentary on cornbread, particularly the ongoing philosophical argument, “Flour or flourless?”
