Reasons include: The hand sink at the back of the kitchen was blocked and missing paper towels. The hand sink in the men’s restroom was missing paper towels. A parasite destruction letter for raw tuna was not available. Eggs were stored over tofu and other ready-to-eat items in the glass cooler. Raw meats were stored over sauces in the walk-in cooler. Several food items in the cooler at the sushi bar were cold-holding above the proper temperature. Rice at the sushi bar held past proper discard time. Spray bottle had too strong of a sanitizer concentration. Several spray bottles containing chemicals were missing labels. Several foods were left uncovered in coolers and on counters throughout the kitchen. Wonton strips were stored uncovered on a dining room counter. Rice scoops were stored in room temperature water, and there were no test strips for sanitizer.
