Reasons include: There were dented cans in the dry storage area. The person in charge and employees who check cans did not know how to identify an unsafe can. Queso and beans were being hot-held below the proper temperature. Cole slaw and cooked beef brisket were not date-marked in the low-boy unit. Chicken was placed out at room temperature. The women’s restroom did not have covered trash receptacles in the stalls. An employee had food and drink items on the prep table, and a cell phone was on the prep table.

In-use utensils were stored in standing water on the cook line. There was food debris on clean utensils on the knife rack. The ice machine was dirty inside at the deflector panel. A nozzle at the triple sink was below the flood level rim, and there was a gray water leak at the triple sink.
