Fare Exchange: Customize your scones starting with a master recipe

Good morning, June foodie friends. We are revisiting a couple of late spring requests, yet to be answered. Can you supply your best meatloaf recipe and your favorite old-fashioned hash recipe — or for that matter, a new-fashioned one? And how about telling the rest of us where to buy and how to choose the best summer tomatoes?

The voice of experience, R. King, has answered the request for cakes made in a rice cooker.

“My wife bought ours from Amazon. It is a Gourmia brand 5-quart multicooker. You just follow box directions on a cake mix, pour mix into the internal container sprayed with Pam and set the button to Cake. The time of that setting is too short, so when it ends, I reset to Cake (basically starting over) and monitor first by appearance, lifting the lid, then later with a toothpick.”

Mr. K has made a good many of these delicacies, and they’ve been popular even with family members who don’t like cake.

“The one cake that didn’t really finish properly had gone to Keep Warm setting, and I didn’t pay enough attention, so I thought it was done and it wasn’t, though it passed the toothpick test. It never rose up properly.
