I don’t know if you’ve ever had a bad peach, you know the kind — out of season, cold, hard enough to use as a substitute baseball. It’s depressing.
But a good peach, on the other hand, the kind you can eat over the kitchen sink, your wrists glossy from fragrant juice dripping down to your elbows. Now, that’s a star ingredient.
Peaches have been finding their way into many of my meals this summer. The golden fruit has ended up tangled in an arugula and pasta salad with creamy burrata cheese, or as delicate slivers topping a homemade pizza with prosciutto and a balsamic glaze.
