France’s mirepoix, Serbia’s cabbage rolls join Chattanooga-area cooks’ culinary conversation

Good morning, cooking friends. I have a long-distance opener. A young reader, Zélie, is hungry for sarma, a Balkan cabbage dish that is a specialty of her Serbian grandmother’s kitchen. Can you put ingredients and directions to that memory?

Next came a comment from Patrick of Rock Spring, Georgia, that produced a topic for your responses. He wrote, “For what it’s worth, my kitchen life changed when I discovered mirepoix. I love pickling, sauces and preserving. Nonetheless, I have to relearn recipes by consulting with my wife.”

Teamwork and consultations: Both are enrichment for your kitchen and mine. And so we ask you (any of you) to teach us about mirepoix.
