Duo turns saucy hobby into award-winner seller

* What's special: Owners John Lunn and Dave Dockery started making sauces to create a recipe that was not only flavorful but had sufficient spiciness as well. The original recipe was created after several months of tests on family and friends, Dockery said.

* The origin story: Lunn and Dockery decided to enter their original recipe sauce in Chattanooga Market's Kickin' Chicken Hot Wing Cook Off about five years ago. They won the competition, and in 2007, took first place at the Southern Hot Wing Festival in Memphis. The company's sauces have also placed as high as second in the national Scovie awards.

* How long does it take to make? The sauces all take about three hours to make per batch, Dockery said.

* Where it's sold: Suck Creek Wings sauces are used on food at Market Street Tavern, Five 8 Burrito in Harrison and Chanticleer Inn on Lookout Mountain, where they are also for sale. All the sauces, except their barbecue sauce, are available at Green Life.

* How long have they been making them: Suck Creek Wings started shortly after winning the Kickin' Chicken Hot Wing Cook Off in October 2005.

* Plans: Dockery said the company's immediate sights are set on expanding their presence in retail outlets, specifically in regional Whole Foods Markets. Its operators are also experimenting with new flavors but have no plans to release products in the near future.

* Lessons of the trade: "There's certainly a lot more work that goes into it when you take on all the responsibilities of running a business as opposed to something you did for fun," Dockery said. "It takes on a life of its own. It's still a hobby, but it has to be treated like a profession."
