The new Bojangles' restaurants, under construction in Soddy-Daisy, above, and Red Bank, are expected to open this summer.

Project: Bojangles' Famous Chicken 'n Biscuits.

Location: Soddy-Daisy, Springfield Road by Zaxby's and Red Bank, Dayton Boulevard.

Size: New stores are 3,800 square feet with seating capacities for over 75 guests.

History: Bojangles' Restaurants Inc. was founded in 1977 in Charlotte, N.C. The fast-casual chain serves traditional Southern recipes, including its "world-famous" fried chicken, made-from-scratch buttermilk biscuits, "flavorful fixin's" and "Legendary Iced Tea." The chain has more than 600 locations in 10 states, primarily in the Southeast. Bojangles' also has Washington, D.C., and international locations.

Scope: Bojangles' investment in Chattanooga coincides with a rise in chicken consumption nationwide. Three of the biggest players in chicken eateries in the Southeast - Bojangles', Chick-fil-A and Zaxby's - are generally performing better than fast food, burger-centric chains right now.

Investment: The average for a new restaurant is $1.7 million.

Schedule: Both locations are expected to open this summer.

Careers: Each new store creates about 55 to 60 jobs. Job seekers should visit www.bojangles.com/about/employment.
